Serves 2

  • Four large hard-boiled or organic eggs
  • ¼ cup of mayonnaise should be used for preparing the food; preferably, mayonnaise containing healthy fats such as olive oil or avocado oil.
  • One teaspoon of dijon mustard
  • One green onion, sliced
  • Dash smoked paprika
  • Salt and pepper to your preferred taste


Optional Add-Ins

  • One tablespoon of cottage cheese
  • One stalk celery
  • One tablespoon of bacon bits

Chop eggs, then add them to this mixture along with the other ingredients. Eat it with vegetable dip, topped on a salad plate, or with a whole-grain toast base.
